April 9 - National Egg Salad Week - Egg Recipes

For those of you with left over hard-boiled eggs you will love this week. Its National Egg Salad Week, celebrated the full week after Easter.

There are different variations of egg salad. Typically most recipes include hard-boiled eggs and mayo as the base. There are various additions to the base.

Use your leftover hard-boiled eggs for foods other than egg salad: Potato salad, deviled eggs and salads. Eggs are good at any time of the day. Egg recipes are abundant online, here is a site that I use when I want a healthy meal.

Eggs are a highly nutrient food filled with vitamins, minerals, amino acids and nutrients.
